Assassin in both. It's just the archetype I really enjoy. Since my sin is also my main, I feel like I'm tactically the best with him. I don't have to pay as much attention to my skill bar so I'm much more keen on things like aggro and key targets in PvE and positioning and movement in PvP.
I also very much like the Mesmer type, but physicals crush casters in PvE. Nonetheless, Mesmer is my "main" on my second account (going for GWAMM and 30/50 on her), and will probably be my second GW2 character after, of course, Thief.

PvE - Paragons, since they really don't have a good PvP spot at the moment. Knew I had to have one the minute I laid eyes on them. The shining armor, the angel wings, being both buff and supportive. Forever my favorite class.
PvP - Assassins. Nothing says satisfaction like teleporting to the backline and killing that key target in one combo.

PvE- Ele
PvP- Ranger. Nothing like "Strike As One" and "Otyugh's Cry" for teaching blocking Monks a thing or two about a thing or two.

I enjoy spirit spamming with a ritualist in pve, it seems quite overpowered. In pvp I only like playing monk in RA and FA kurz and then I'll sometimes play asssassin in FA.

PvE: Warrior, Paragon
I LOVE creating hero builds! While a warrior's team builds revolve around buffing him, the Paragon's team revolves around buffing your allies! Both are two amazing, and fun playstyles!
PvP: Ranger
The ranger can do SOOO many things! If I feel like watching people panic and rage, I just run Burning Arrow with DShot in RA! Apparently teams cannot handle 9 Degen spread to an entire team.
Meanwhile in JQ I can troll RoJ monks with Dshot and other interrupts, as well as Debilitating shot! I could also run Healing Spring to completely negate the damage done by AoE!
Further hilarity ensures when you run a team of rangers up against invoke spike. I swear, those damn eles are just so stupid, they don't know how to cope with the slightest interrupt!
Rangers are AMAZING in PvP in my opinion!
